Vanilla Bean Oatmeal

Vanilla Bean Oatmeal

  • 1 cup gluten free rolled oats
  • 2 cups of water
  • 1 vanilla bean
  • 1-2 tsp vanilla extract
  • Coconut sugar to taste
  • Pinch of salt
  • 1 scoop Genepro protein powder (optional)
Slice vanilla bean down the center and scrape out the inside with a knife. Place vanilla and the whole bean in a sauce pan with 2 cups of water. Bring to a boil. Add oats and turn the heat down to medium low. Allow oats to simmer stirring occasionally for 5-8 minutes or until liquid is absorbed. Sweeten to taste. Stir in vanilla extract, salt, and protein powder if desired. Enjoy!
